Growing up Italian-American in and around NYC, I feel a sense of cultural and familial connection to food. Food was something very important in my family, as we ALWAYS ate dinner together every night- no matter how early or late we had to eat. That mentality has shaped who I am and how I feel about food. It can be fun, delicious, and creative and that is why I love food! I hope you enjoy all of my recipes I create and pictures of the food that I find!

Stephen's Favorite Chicken Recipes
Fun chicken recipes my husband usually makes...

Chicken Pasta Salad
3 stewed chicken breast cut into bite-sized pieces
4oz rotini cooked
1c diced tomato
1 c green pepper, chopped
¼ c onion, chopped
1c mayonnaise
1/4c parmesan cheese
· Mix together and serve chilled
Spinach Chicken
· Mix 1/2c mayo, 1c chopped fresh baby spinach, 1/3c chopped walnuts, 2T parm cheese, 1 tsp breadcrumbs.
· Pour mixture over 6 boneless/skinless chicken breasts.
Baked Chicken
3 or 4 bone-in chicken breasts or any chicken pieces.
· Heat in sauce pan: 4T lemon juice, ½c butter, 2 tsp garlic powder, 1 tsp poultry seasoning, ½ tsp salt and pepper.
· Pour over chicken and bake uncovered for 1 hour on 350*.
Springtime Chicken
6 boneless, skinless chicken breasts halves
1lb fresh asparagus, trimmed at ends
1oz bleu cheese, crumbled
1/2c water
1 can cream of chicken soup
Pepper
· Place chicken in ungreased casserole dish.
· Mix soup, cheese, water, and pepper.
· Pour over chicken and bake at 350* for 40 minutes.
· Remove asparagus. Cover tightly and bake for 30 more minutes.
