Simple Salads

Garlic Salad
·         Lettuce (broken, washed, and dried)
·         Purple onion
·         Bell pepper
·         Cucumber
·         Olive oil garlic powder

Broccoli Cole Slaw
·         1 bag of angel fair cole slaw
·         1 bag broccoli cole slaw
·         1c sliced almonds (toasted)
·         1 pkg sunflower seeds
·         2 pkg ramen-beef (two ramen packets and one broken noodles)
·         Dressing: 1 c veg oil, 1/2c apple cider vinegar, 1/2c sugar

Stephen's Fish Recipes

So Simple, So Yum!

Simple Fish
·         Red/black pepper, garlic, onion, 1/2c tomato sauce, and lime in food processor.
·         Pour over fish.
·         Add hot sauce and glass of white wine.
·         Then bake for 15-20 minutes.

Catfish Parmesan
1c fine, dry breadcrumbs
1/3c grated parm
1tsp salt
1/2tsp pepper
1/2tsp paprika
2T chopped parsley
½ tsp chopped oregano
6 (8oz) catfish filets
½ cup butter, melted
·         Stir breadcrumbs, parm, salt, pepper, and paprika (and parsley and oregano if desired). Dip catfish in butter then breadcrumb mixture.
·         Bake at 375 for 25min.

Chicken Pasta Salad
3 stewed chicken breast cut into bite-sized pieces

4oz rotini cooked

1c diced tomato

1 c green pepper, chopped

¼ c onion, chopped

1c mayonnaise

1/4c parmesan cheese

· Mix together and serve chilled



Spinach Chicken
· Mix 1/2c mayo, 1c chopped fresh baby spinach, 1/3c chopped walnuts, 2T parm cheese, 1 tsp breadcrumbs.

· Pour mixture over 6 boneless/skinless chicken breasts.




Baked Chicken
3 or 4 bone-in chicken breasts or any chicken pieces.

· Heat in sauce pan: 4T lemon juice, ½c butter, 2 tsp garlic powder, 1 tsp poultry seasoning, ½ tsp salt and pepper.

· Pour over chicken and bake uncovered for 1 hour on 350*.



Springtime Chicken
6 boneless, skinless chicken breasts halves

1lb fresh asparagus, trimmed at ends

1oz bleu cheese, crumbled

1/2c water

1 can cream of chicken soup

Pepper

· Place chicken in ungreased casserole dish.

· Mix soup, cheese, water, and pepper.

· Pour over chicken and bake at 350* for 40 minutes.

· Remove asparagus. Cover tightly and bake for 30 more minutes.

Sweet Potato Pies

So perfect at Thanksgiving... and any other day for that matter....

Sweet Potato Pies



Regular pie crust

3 large sweet potatoes

1 stick of butter

3 eggs

2 cups of sugar

1 ½ tsp all spice

1 1/3 tbsp vanilla

¼c milk



· Boil potatoes slowly for one hour then skin

· Put potatoes back in pot and mash with sugar, eggs, allspice, and vanilla

· Mix in milk and fill pie crusts 2/3 full- should be soupy

· Bake at 350 for approximately 1 hour or more

Southern Favorites


My Husband's Southern Favorites with All of the Fat, Fixins, and Decliousness



Biscuits

· 2 cups of self rising flour sifted

· 7 tbsp of shortening chopped up and blended

· ¾ cup of milk- stir from center as you add milk

· Roll ½ to ¾ in thick and cut biscuits.



Pinto Beans

· Take 1lb dried pinto beans and wash well.

· Let them soak overnight.

· Boil 10 min. Add pork meat or oil plus 1T salt and continue to boil for 2 ½ hours.

Fried Chicken

Wash chicken and salt sides. Put in fridge

Fill pan half up with oil

Put stove on medium high

1 egg, little milk. Beat up.

2 cups flour and 2tsp salt and 1 tsp pepper in bag.

· Dip in egg/milk then flour.

· 25-35 min

Paw Paw’s Corn Bread

1 ½ cups corn meal

1c butter milk

¼ oil

1 egg



· Bake at 450





Mac and Cheese



7-8 oz cooked and cooled elbow pasta

1 egg

½tsp salt

1/2 tsp black pepper

2c milk

1lb cheddar cheese



· Layer the pasta and cheese, starting with the pasta.

· Beat together, egg, seasonings, and milk and pour over layered pasta.

Deep dish pie crust

Tomatoes

Oregano

1c cheddar cheese

1c grated mozzarella cheese

1c mayo



Bake the deep dish pie crust after pricking with fork. Bake until golden brown.

Slice the tomatoes, wipe with a paper towel, and salt to taste.

Sprinkle oregano.

Mix the cheeses and mayo and spread over tomatoes.

Cook on 350 until brown.

Chicke Pot Pie

My husband's grandmother "Maw-Maw" has an awesome chicken pot pie recipe that is a little bit untraditional, but very perfect for a cold winter night.

Margie’s Chicken Pot Pie



1c flour

1 stick melted butter

1c milk

2 chicken breasts

Can of mixed veggies

Can of cream of mushroom



Set aside a 9x13 baking pan.

Preheat oven to 350.

Boil chicken breasts for 30 min. Keep broth.

Fill baking dish with bite size chicken pieces

Drain one can of mixed veggies. And pour over chicken.

Add one can of cream of mushroom soup over the veggies.

Add two cups of the reserved chicken broth.

Mix 1c flour, 1 stick melted butter, and 1c milk. Pour batter on top of chicken and veggie mixture and bake for 60 minutes.
